Indulge in a delightful twist on a classic Italian favourite with our Olivieri Gnocchi Carbonara recipe. This quick and easy dish combines the rich, creamy flavours of traditional carbonara with the light, fluffy texture of potato gnocchi.
Ready in just 15 minutes, it’s the perfect gourmet dinner for two that’s sure to impress!
Ingredients
- 4 slices bacon, diced
- 3 tbsp. olive oil
- 2 egg yolks
- 1/2 cup grated Grana Padano cheese
- Plenty of freshly ground black pepper
- 1-350g package of Olivieri Fresh Potato Gnocchi
- Kosher salt, as needed
Instructions
- Bring a medium-sized pot of water to a boil, approximately 5 cups.
- While the water heats, fry the diced bacon with olive oil over medium heat until crisp. Keep the pan on very low heat.
- In a heat-proof bowl, whisk the egg yolks until smooth, then whisk in about 1/3 cup of the grated Grana Padano cheese. Season with a pinch of salt and freshly ground black pepper.
- Season the boiling water with salt until it tastes pleasantly salty (about 2 tbsp.). Add the gnocchi, stir, and return to a boil. Cook for 2-3 minutes, or until the gnocchi float.
- Before draining, slowly whisk about 1/2 cup of the gnocchi cooking water into the egg and cheese mixture to temper it.
- Drain the gnocchi or use a spider to transfer them directly to the bacon pan.
- Mix the gnocchi and bacon into the egg and cheese mixture, stirring well to create a creamy sauce.
- Divide the gnocchi between two warm bowls, and top with additional black pepper and the remaining Grana Padano cheese. Serve immediately.
Tips & Variations
Tip: For an extra rich flavour, try adding a splash of heavy cream to the egg and cheese mixture.
