We’ve made a lot of party food over the years, and this Cheeseburger Dip has quickly become one of our favourites. It has everything people love about a great cheeseburger: seasoned beef, creamy cheese, crunchy lettuce, pickles, tomatoes, and plenty of cheddar. Best of all, almost everything can be prepared before you leave home.
Whether you’re heading to the cottage, packing up the camper, or inviting friends over to watch the game, this cheeseburger dip is exactly the kind of recipe we love. The work is done ahead of time, and when it’s time to eat, all you have to do is warm it up and add the fresh toppings.

What to Know Before You Start
Our favourite trick for tender ground beef is adding a small amount of baking soda before cooking. It raises the pH of the meat, helping it hold onto moisture while it browns. It’s a simple restaurant technique that makes a noticeable difference.
We also recommend salting the diced tomatoes and letting them drain for a few minutes before using them. This removes excess moisture and keeps the dip rich and creamy instead of watery.

Ingredients
Dip
- 1 package (8 oz / 250 g) Philadelphia Cream Cheese, softened
- 1 1/2 cups (500 mL) sour cream
- 1 green onion, finely chopped
- 1 1/2 Tbsp burger spice (see recipe below or use your own fave blend)
Beef
- 1 lb (454 g) lean ground beef
- 1/2 tsp baking soda
- 1 1/2 Tbsp burger spice
Garnishes
- 1/4 head iceberg lettuce, finely shredded
- 1/2 cup chopped dill pickles
- 1 Roma tomato, seeded, diced and lightly salted
- 1 cup (125 g) grated cheddar cheese
Mac Sauce
- 1/2 cup (125 mL) Hellmann’s mayonnaise
- 1 Tbsp ketchup
- 1 Tbsp pickle juice
- 1 tsp yellow mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp mustard powder
- 1/4 tsp smoked paprika

I subscribe the updates and get links to recipes - I recently made the Olive Oil Lemon cake. It turned out delicious – as you said in the description, very moist! I was at the Studio for the very first class they held and I have continued to take classes for the past 13 years. While some things have changed over the years, the quality, knowledge and skills Jody and Kirstie bring to each class has not.The skills I learned through the their instruction have been used daily.
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
Instructions
Cheeseburger Dip Instructions
- In a bowl, combine the softened cream cheese, sour cream, green onion, and burger spice. Spread into the bottom of a baking dish or cast iron skillet.
- Toss the ground beef with the baking soda and let it sit for 10–15 minutes. This simple trick helps the beef stay tender and juicy. Cook over medium-high heat until browned, then stir in the burger spice.
- Spread the cooked beef evenly over the cream cheese mixture.
- Bake at 350°F (175°C) for about 15-20 minutes, or until hot and bubbling.
- While the dip bakes, whisk together all of the Mac Sauce ingredients until smooth.
- Top the hot dip with shredded lettuce, diced tomato, chopped pickles, grated cheddar, and a generous drizzle of Mac Sauce.
- Serve immediately with kettle chips, tortilla chips, toasted baguette slices, or sturdy crackers.

Make-Ahead Tips for the Cottage or Campsite
This is one of our favourite recipes because almost everything can be done before you leave home.
- Brown and season the beef a day or two ahead and refrigerate.
- Mix the cream cheese base and store it in a covered container.
- Make the Mac Sauce in advance. It keeps beautifully for several days.
- Chop the lettuce, tomatoes, and pickles before you leave and pack them separately.
- Assemble and bake at the cottage, or simply warm the dip and finish with the fresh toppings.
Chef’s Tips for Cheeseburger Dip
- Don’t skip the baking soda. It’s one of our favourite tricks for incredibly tender ground beef.
- Salt the tomatoes. A few minutes on paper towel removes excess moisture so your dip stays creamy instead of watery.
- Use sturdy chips. Thick kettle chips hold up much better than thin chips.
- Make extra Mac Sauce. It’s fantastic on burgers, fries, sandwiches, and wraps.
