Ingredients

  • 1 clove garlic, minced
  • Juice of 1/2 lemon
  • 2 tbsp fresh oregano or cilantro, chopped
  • 1/2 bunch Italian parsley, chopped
  • 2 tbsp capers, chopped
  • 1/2 cup olive oil
  • 2 tbsp sherry wine vinegar
  • 1/2 tsp kosher salt

Instructions

  1. Finely chop the parsley, oregano (or cilantro), capers, and garlic.

  2. In a small bowl, whisk together the lemon juice, sherry vinegar, and olive oil.

  3. Stir in the chopped herbs and season with salt.

  4. Let the sauce sit for at least 10 minutes before serving to allow the flavors to meld.

On Grilled Meat & Seafood – The classic pairing! Spoon it over steak, chicken, lamb, or shrimp for an instant flavor boost. ✔ Drizzled Over Roasted Veggies – Carrots, potatoes, zucchini—chimichurri makes them all sing. ✔ Tossed with Pasta – Skip the traditional pesto and mix chimichurri with warm pasta for a herby, no-cook sauce. ✔ As a Spread – Slather it on crusty bread, sandwiches, or even as a base for avocado toast. ✔ As a Marinade – Mix it into proteins before grilling for extra depth of flavor.

Substitutions

  • No sherry vinegar? Swap it with red wine vinegar or apple cider vinegar.

  • Oregano vs. Cilantro? Use whichever you prefer (or both!).

    It has been most likely a year and a half since I’ve made moussaka. Having the recording available was a godsend. So good and lots of leftovers! Having the recording is priceless!I made Dan Dan noodles last month and again referred to the recording as it has been awhile. I was grateful for the reminders, tips and tricks. Not to mention, I love to cook with Kirstie and Jody. They make it so much fun!Most of the meals I make are from your repertoire. I think I have close to 60!

    I recently did an online Lamb Briyani class. It used some cooking techniques I wasn't familiar with and produced a dish that was as tasty as the best Indian food I've ever had the pleasure of enjoying.

    We did a virtual zoom cooking class. It was better than cooking classes we have done in a actual class. We really enjoyed our ourselves. We have made the meal a couple of times since the class. We have friends over for the session and have great restaurant quality meals

    Online classes have allowed me the convenience to open my computer and learn in the comfort of my home and to do the class on my own schedule rather than missing out due to life's interruptions. Classes are paced well and the chef's are ready to answer your cooking questions even if they are unrelated to the class. I have used the recipes frequently in my day to day life and recently at an event where I overhead participants raving about the soup and cookies I had prepared, which were from Culinary Studio class recipes.I was at the Studio for the very first class they held and I have continued to take classes for the past 13 years. While some things have changed over the years, the quality, knowledge and skills Jody and Kirstie bring to each class has not.The skills I learned through the their instruction have been used daily.

What to Know/Avoid in This Recipe

🚫 Avoid over-processing the ingredients. Chimichurri should be finely chopped, not blended into a paste. 🚫 Don’t skimp on the vinegar. That acidity is key to balancing the richness of olive oil. ✅ Use high-quality olive oil. Since this is a raw sauce, good ingredients make all the difference. ✅ Let it rest. Giving chimichurri at least 10 minutes to sit brings all those flavours together. 

Storage Recommendations

  • Short-term: Store in an airtight container in the fridge for up to 4 days.

  • Long-term: Freeze in small portions (ice cube trays work great!) and thaw as needed.

  • Pro Tip: Always cover leftovers with a thin layer of olive oil to prevent oxidation.

FAQ

Can I use dried herbs? This is a fresh herb sauce. Dried Herbs just won’t work the same way in this recipe.

Is chimichurri the same as pesto? Not quite! Chimichurri is tangier and doesn’t contain nuts or cheese like traditional pesto.

How long does homemade chimichurri last? About 3-4 days in the fridge, but you can freeze it for longer storage.

Can I use a blender or food processor? It’s best to chop everything by hand for the right texture. A food processor can make it too smooth.
